A sour and dry, medium-strength cocktail, shaken over ice, served in a highball glass.
Serve in: highball glass
Ingredients
- 1 ozgold rum
- 0.5 ozlime juice
- 0.5 ozhoney syrup
- 1.5 ozchampagne
- iceoptional
How to Make an Air Mail
Instructions
- Add the first three ingredients to a cocktail shaker with ice.
- Shake vigorously and strain into a highball filled with ice.
- Top with Champagne and serve!
Garnish
Garnish with the tip of a mint sprig.
Tips & substitutions
- No lime juice? Try lemon juice.
- No honey syrup? Try simple syrup, agave syrup or maple syrup.
The glass
Serve this one in a highball glass. Tall and narrow with straight or slightly flaring sides, the highball glass is used to serve highball cocktails and other mixed drinks. A highball glass is taller than an Old Fashioned glass, and shorter and wider than a Collins glass.

The Air Mail (also Airmail cocktail) is a classic cocktail based on rum, lime or lemon juice, honey, and sparkling wine. It was probably created during or shortly after the period of prohibition in the United States of America or in Cuba, i.e. in the 1920s or 1930s. In 1941, the recipe was published in a mixology book called Here's How accompanied by the note: It ought to make you fly high.
